I don’t remember eating Hamburger Helper as a kid, but I remember friends raving about it and always being curious.  As an adult, I eventually tried it and I just hated it.  Granted, I am not the cook of this Messy Momming duo, but the directions on the box were pretty simple and no matter how many times I tried it…whether I made it or my husband made it, I just didn’t like it.  But Hubby loved it. During one of my meal plan kicks, I went on a mission to create his favorite without the cardboard pasta and powder sauce mix.  I combined a few pinterest recipes, tweaking them for what we like, and more importantly, what we had on hand. It came out to be a huge success with Hubby AND my picky Messy Kids!!

  • 2-3 lbs of ground beef
  • 2 ish tablespoons butter
  • 1 Onion, chopped
  • 32 oz box of elbow noodles20161229_163022
  • 3 cups Hot Water
  • 5 Cups Milk
  • 2 tablespoons flour
  • Spices: Garlic Powder, Paprika, Cayenne Pepper, Crushed Red Pepper, Salt & Pepper
  • 1 lb shredded Cheddar Cheese
  • Parmesan Cheese

Start by melting the butter in a large skillet and add the onion, sauteing until barely soft. Add the ground beef, using salt and pepper to taste.

Once the meat is browned, add the elbow noodles, hot water and milk.  20161229_163028

Luckily my tap water gets ridiculously hot! Add the flour and give it all a stir.  I used the spices to taste; dumped a bunch of garlic powder, a few shakes of Paprika and Cayenne and two pinches of Red Pepper.  Stir it all around and let it come to a boil.

I let it boil for a few, then turn down the heat and let it simmer, uncovered, stirring regularly (I always forget to stir as often as I should but it still came out good!)  Once the noodles are soft and the liquid is absorbed, stir in the Cheddar.  Make sure you mix it well and then remove from heat.

Hubby adds Parmesan but I eat it as is.  This is a seconds and thirds kind of meal, and the leftovers are even better!!
