Who doesn’t love a quick delicious side dish?! Especially if it’s made with cheese! These Smoked Gouda Smashed Potatoes are a house favorite and paired perfectly with our Braised Beef and Mushroom Stew.
What you need:
- 2 lbs Yukon Gold potatoes
- 1-2 cups smoked Gouda shredded, reserving outer cheese rind
- 1.5 cups milk
- 3 tablespoons butter
- Add potatoes to a pot of well salted water. Your water should taste like the ocean.
Bring your potatoes to a boil, and heat for 15-20 minutes or until a fork can easily poke through the side.
While your potatoes cook, heat milk and butter over a medium high heat. Bring to just a simmer. Do not boil, it could cause your milk to break.
Once your milk and butter reach a simmer, add shredded cheese and reserved rinds.
Heat back up to a simmer and stir constantly for 2- 3 minutes. Turn off the heat and let sit until the potatoes finish.
Once the potatoes are tender, drain and put back into the pot. Using a potato masher, smash the potatoes.
Remove the cheese rinds from the cheese mixture. Next add the milky cheese mixture to potatoes and continue to smash until combined. Add salt to taste.
This is perfect complement to our Braised Beef and Mushroom Stew, next to a roasted chicken or even Thanksgiving dinner!!
