I try to keep things in the freezer that I can use for a quick dinner.  Often it’s sauce and meatballs but you can only have Italian food so many times a week…I mean it’s delicious and all but we need a change now and again.

After looking through the kitchen, my new concoction was born….Meatball Disco Fries!!

To make I used the following ingredients:

  • Pre-Made Frozen Meatballs
  • Flour
  • 3 Beef bouillon cubes
  • 1/2 – 1 teaspoon Gravy master
  • 4 cups of water
  • French fries
  • Swiss cheese
  • Salt
  • 1 teaspoon pepper
  • Olive oil

Preheat a pot that can go in the oven, I like to use a cast iron dutch oven.

While your meatballs cook, prepare your french fries.  I baked mine…you could fry them of course.

While the pan heats, coat your meatballs in flour and add to the oil.  Be careful if you are  using frozen meatballs, they could spit.  Let the meatballs heat for about 5 minutes.

Be careful not to let your flour burn.  Turn your meatballs and heat for another 2-3 minutes on the other side.  Next lightly sprinkle 1-2 tablespoons of flour over the meatballs and stir.  You want all the flour to get coated in the fat that is at the bottom of your pan.  This will thicken your disco gravy. Heat and stir for 2-3 minutes. This is to cook the flour taste out.

Next add the water, bouillon cube and pepper to the pan. Heat until to a bubble.  You want your meatball and gravy to reduce by about an inch.  To finish,  add the Gravy master and cover your pot.  Put in the oven at 350 for 30 minutes.


Once your fries are cooked, place on a oven save dish and place in the oven to melt the Swiss cheese.

Take your meatballs out of the oven and uncover.  If the gravy seems to thin continue to heat on the stove until desired thickness.  If its too thick, add a bit of water and let stand a few minutes.


Add salt to taste.

Take the cheese fries out of the oven and smother with meatballs and gravy.
